    <NOTES>1er test de mon id&#233;e de Stout au Boucan&#233; (porc sal&#233;, &#233;pic&#233; et g&#233;n&#233;reusement fum&#233;e) sur une pr&#233;c&#233;dente recette de oatmeal stout.&#13;
J&#039;esp&#232;re que cela transmette ces parfums de viande, de fum&#233;e et un l&#233;ger salement &#224; la bi&#232;re.&#13;
&#13;
Je ne mets volontairement pas de malt fum&#233; sur ce coup pour ne pas risquer de masquer les apports du boucan&#233;.&#13;
&#13;
Choix du boucan&#233; : un boucan&#233; artisanal (de Chez Raymond - St-Paul), pas trop sec, bien fum&#233;, d&#233;coup&#233; en gros tron&#231;on dont je garde tout (os, maigre, gras). Dessalage avant utilisation.&#13;
Ajout en d&#233;but d&#039;&#233;bullition. Ne vais pas tenter de d&#233;graisser le mout &#224; froid, je compte faire un passage &#224; froid en fin de fermentation pour figer le gras en exc&#233;dent pour qu&#039;il surnage et ne passe pas lors des transfert.&#13;
Evidement, r&#233;cup&#233;ration du boucan&#233; pour d&#233;gustation.&#13;
