Une strong bitter malt&#233;e, caram&#233;lis&#233;e et peu alcoolis&#233;e. On va chercher un maximum de buvabilit&#233; par un emp&#226;tage &#34;m&#233;diant&#34; pour favoriser une quantit&#233; raisonnable de dextrine et un moelleux en bouche appr&#233;ciable. Pour renforcer les ar&#244;mes de caramel, les grains seront bouillis pendant 20min &#224; la fin de l&#039;emp&#226;tage avec un peu d&#039;eau de rin&#231;age en veillant &#224; remuer r&#233;guli&#232;rement. Ceci viserait &#224; reproduire les effets d&#039;un emp&#226;tage par d&#233;coction en d&#233;clenchant une caram&#233;lisation des grains, qui seront rinc&#233;s comme &#224; l&#039;accoutum&#233;. &#13;
