    <NOTES>Pour cette bi&#232;re de saison aux fruits, j&#039;ai cherch&#233; &#224; apporter quelques notes &#233;pic&#233;es en ajoutant deux paliers bas 43 et 55&#176;C.&#13;
Les ph&#233;nols cr&#233;&#233;s devraient relever un peu l&#039;ensemble. J&#039;ai ajout&#233; 25% de fruits, dont 1/3 de m&#251;res et 2/3 de mirabelles.&#13;
pour un go&#251;t un peu plus rustique, j&#039;ai ajout&#233; les fruits en primaire plut&#244;t qu&#039;en secondaire.&#13;
Fermenteur rempli jusqu&#039;en haut et tr&#232;s gros krausen, donc blow-off obligatoire.&#13;
j&#039;ai ajout&#233; 500g de dextrose &#224; l&#039;&#233;bu pour augmenter l&#039;ABV et la puissance de la fermentation.&#13;
La levure Belle saison de Lallemand &#224; 24&#176;C donne de tr&#232;s bons r&#233;sultats.&#13;
Sur ce brassin j&#039;ai obtenu une efficacit&#233; globale de 82.3%&#13;
On attend pour voir la suite. Ok voil&#224; pour la suite: je n&#039;ai pas st&#233;rilis&#233; mes fruits donc fermentation mixte aux levures naturelles en plus du pitch.  &#13;
J&#039;ai laiss&#233; 10 mois en fermenteur pour terminer la fermentation et obtenir du funk. La carbonatation en bouteilles avec les bretts est tr&#232;s lente, minimum 2 mois apr&#232;s resucrage.</NOTES>
