    <NOTES>Cette ann&#233;e, en 2020, j&#039;ai voulu une bi&#232;re de No&#235;l Tr&#232;s malt&#233;e, avec des ar&#244;mes puissants. &#13;
Les &#233;pices sont l&#224; uniquement pour relever la bi&#232;re de mani&#232;re subtile, en aucun cas il n&#039;est question de faire un vin chaud.&#13;
Dans ce cas pr&#233;sent, les ar&#244;mes proviennent d&#039;oranges &#224; l&#039;&#233;bu, d&#039;une grosse quantit&#233; de miel brun qui rappellera un peu l&#039;hydromel.&#13;
Il y a beaucoup de malts biscuit et caramel qui sont sublim&#233;s par la levure abbaye BE-256.&#13;
En secondaire je fais un petit DH avec du Mandarina Bavaria et des zestes d&#039;oranges.&#13;
Mon profil d&#039;eau pousse le malt &#224; fond   1-1-2-1.5  120 calcium, 120 sulfates, 240 chlorures, 180 carbonates.&#13;
