    <NOTES>Ces Stouts sont g&#233;n&#233;ralement ferment&#233;s &#224; des temp&#233;ratures ti&#232;des avec une levure de Lager. J&#039;ai cependant opt&#233; pour la Nottingham Yeast qui peut &#234;tre utiliser pour produire des lagers (plus commode avec mon syst&#232;me de refroidissement maison cf photo )&#13;
A la d&#233;gustation le r&#233;sultat attendu est au RDV : Proche en go&#251;t &#224; la fois d&#039;un Sweet Stout et en m&#234;me temps d&#039;un Imperial Stout mais avec moins d&#039;amertume et de notes torr&#233;fi&#233;es moins prononc&#233;es et un taux d&#039;alcool inf&#233;rieur. Beaucoup plus doux et moins amer que les Foreign Extra Stouts de densit&#233; pourtant &#233;quivalente cf les chiffres ci-dessous &#224; l&#039;embouteillage : &#13;
Di : 1.073 soit une efficacit&#233; d&#039;extraction de 82% environ&#13;
Df : 1.020&#13;
Att&#233;nuation apparente : 73%&#13;
Alcool en vol avant refermentation : 6.9%&#13;
Alcool en vol attendu  apr&#232;s refermentation : 7.3% avec environ 6g/l de cassonade pour un vol de C02 autour de 2.5&#13;
IBU du coup &#224; 29 et un Ratio d&#039;amertume relative &#224; 0.39 &#13;
pH avant embouteillage &#224; 4.5 donc dans les normes pour une dark ale&#13;
l&#039;EBC autour de 60-65 (&#233;chelle visuelle)&#13;
